Winemaking and ageing
Fully ripe Cabernet Sauvignon and Merlot vinified as a white wine, using saignée juice.
Three to four hours on skins at 12–13 °C, static settling at 5 °C, 14–17 days of fermentation at 18–20 °C. Six months on fine lees in stainless steel.
