Winemaking and ageing
Minimal, gentle handling from grape to bottle. Precision winemaking on the “zero-zero” principle, which allows very low SO₂.
Direct pneumatic pressing under 1 bar, 48 hours of cold settling, fermentation at 18–20 °C. Five months on fine lees in stainless steel.
