Picked at night
We pick by hand and only at night, so the grapes are spared the stress of temperature swings.

DAVINO
Our story
DAVINO was born in Ceptura, in Dealu Mare, from a simple idea: great wine is made in the vineyard, and the winery only keeps it safe.
We work the soil with traditional methods and modern means. Wild plants, which classical viticulture calls weeds, are part of the vineyard’s biological balance. We have gone back to working with horses and plough several times a year, so the soil can breathe and hold water through dry spells.
Each plot and each grape is vinified separately. That keeps the difference between one hill and the next visible, and lets every wine say where it comes from.

Philosophy
The motto on the DAVINO emblem. Wine is a gift, and our job is not to spoil it: to step in as little as possible, as late as possible, and only when the vineyard asks.
What we do differently
We pick by hand and only at night, so the grapes are spared the stress of temperature swings.
We use no enzymes. Fermentations rely mostly on the grapes’ own wild yeast.
Sulphur is kept as low as possible. Until bottling, the wines are almost unsulphured.
Since 2021 part of the crop is organic. By 2028, every DAVINO wine will be.

People
With these skilled and gentle people, heirs to the spirit of the place, DAVINO sets out each year on the long road of wine towards perfection.
