Winemaking and ageing
Selective picking from the most valuable plots, vines around 40 years old. Each grape is vinified separately, plot by plot, after two rounds of hand sorting: bunches, then berries.
Horizontal paddle fermenters, classic maceration at 26–27 °C: 30 days for Cabernet, 22 for Merlot, 19 for Fetească Neagră. Eighteen months in 100% new Romanian oak with lees stirring. The blend is made from the best barrels: Cabernet Sauvignon 73%, Merlot 20%, Fetească Neagră 7%. At least 36 months in bottle.
