Winemaking and ageing
Sauvignon Blanc 86%, Fetească Albă 14%, vinified separately. The Sauvignon comes from the best plots on the Valea Gardului slope: a quarter from vines aged 28–32 years, the rest from young vines of three French clones.
Five to six hours of skin contact at 12–15 °C, free-run juice only, cold settled for 24 hours. Fermented at 10–12 °C; 30% of the Sauvignon ferments and ages in 10 hl wood. Six months of bâtonnage on fine lees.
