Winemaking and ageing
Selective picking from the best plots, a final selection on the sorting table, three grapes vinified separately. A mostly reductive approach that keeps varietal aromas and adds depth from fine lees.
Destemmed, uncrushed berries; five hours of skin contact for the Sauvignon; free-run juice cold settled for 24–26 hours; fermented at 10–12 °C. The final blend is set after one to two months of trial blends.
