Winemaking and ageing
Made only in good years, from the best Merlot and Cabernet Sauvignon plots, picked when the fruit shows full ripeness.
Gravity-separated juice after three hours (Merlot) and five hours (Cabernet) on skins at 14–15 °C, 48 hours of cold stabulation, then 14–17 days of fermentation at 10–12 °C. Aged on fine lees.
